Pressed Salad
- Half a head of cabbage (I like purple or green, any kind will do)
- 1/4 cucumber, sliced
- 4-5 radishes, sliced
- 1 apple, sliced
- 1 green onion, sliced thin
- 1 handful seeds (sunflower, sesame, pumpkin) toasted
- 1 tbsp umeboshi plum vinegar
- 1 tbsp balsamic vinegar
- 1tbsp apple juice
- optional: kale, collards spinach, orange
Can eat right away or save it. Keeps for 3-4 days.
